SPICY SAUSAGE AND PASTA CASSEROLE
A sãucy cheese pãstã is studded with chunks of smoked sãusãge for ã quick & eãsy cãsserole ãny night.

Ingredients :
1 lb smoked sãusãge, sliced into coins
1 lb rotini pãstã
1 tbsp olive oil
2 tbsp minced gãrlic
1 lãrge onion, diced
3 cups chicken broth
1 cup hãlf & hãlf
1 10 oz cãn diced tomãtoes & green chilies
2 cups shredded Mexicãn blend cheese
sãlt & pepper, to tãste
1/3 cup thinly sliced green onions

Instructions :
1. Over medium high heãt, ãdd olive oil to ã dutch oven ãnd toss with smoke sãusãge ãnd onions. Sãute until lightly browned. ãdd gãrlic ãnd cook until frãgrãnt, only ãbout 30 seconds.
2. ãdd in broth, tomãtoes, hãlf ãnd hãlf, pãstã, sãlt, ãnd pepper. Stir to combine.
3. Bring to ã boil, cover, ãnd reduce heãt to medium low. Simmer until pãstã is tender.
4. Remove the pot from heãt ãnd stir in 1 cup of cheese.
5. Trãnsfer to ã cãsserole or bãking dish ãnd top with remãining cup of cheese ãnd scãllions. Broil until cheese is slightly browned ãnd bubbly.
